    Open faced sandwich of country sourdough from On The Rise Artisan Breads, homemade mayo with Calabrian chili, baby romaine, heirloom tomato, avocado, Fra’ Mani roasted turkey galantine.

    I happily worked again as a representative for Fra’ Mani’s Handcrafted Salumi at the annual EuroUSA Food Show. This year brought the unveiling of their first non-pork product, roasted turkey galantine.

    Roasted Turkey Galantine Ingredients:

    Range-grown, vegetarian-fed turkey from Diestel Farm.

    Breast.

    Thigh.

    Tenderloin.

    Salt.

    Pepper.

    That’s it. No binders, no fillers. Gently tumbled – a process which allows the natural turkey proteins to create cohesion.

    And guess what? It tastes like TURKEY.

      That sounds wonderful. I love your photo Heidi. I can imagine the blend of that truly good turkey, the heat and creaminess of the mayo, the avocado, the lettuce, the juice of the tomato and the slight crisp and chew of the bread.

      A great sandwich is one of my ultimates. Blissful.

      I saw some of Fra’ Mani’s new Roasted Turkey Galantine on sale at my local supermarket. I am a huge fan of their salumi and there are few sandwiches I love more than turkey. I’ve got to give this stuff a try!

      Also, Calabrian chile mayo sounds like the perfect match for such a fine turkey sandwich. Thanks for the inspiration.
