    The REAL working title of this post should be: Heidi’s Tied-For-Second-Place-Which-Very-Well-Might-Have-Been-First-Place-Had-It-Not-Been-For-Gross-Acts-Of-Nepotism-Which-After-Two-Days-Got-Even-Tastier-The-Chili-Not-The-Nepotism-And-Became-Beth-And-Jim’s-Hallelujah!-Engagement Chili. Why engagement chili? Because my friend Beth loves chili almost as much as she loves Jim and missed the cook off because she was very busy getting engaged so I gifted her with my leftovers.

    I’m really, really sorry for this, and please forgive my nonchalance, however….there is no written recipe. Nope, I wung (yes, I wung) together my savory brew while performing a bajillion other tasks, but damn, it was good! I can tell you that I began the chili by searing off 4 lbs. of well-marbled beef chuck that was cubed and salted the night before. And that’s where everything starts to get a little hazy….and spicy. The chili was a once in a lifetime occasion, special, just like Beth and Jim’s ENGAGEMENT!!!!! Congratulations you two. Can’t wait for the wedding.

    Kelli, girlfriend, just look at you all proud hoisting that trophy. It certainly does help when your family is the size of the Von Trapp’s and knows exactly which crock pot is holding their daughters/sisters chili. Next year the voting is blind – you hear?! B.L.I.N.D. But seriously, thanks so much for hosting your first of many (I hope) ridiculously fun chili cook-offs!

    You can visit Beth and offer your congratulations where she is gainfully employed at Lingg. It’s always great to have a girlfriend work somewhere that sells jewelry and other most fabulous things.

    P.S. I am going to work on a rough, (and I do mean rough) replication of the chili recipe. It’ll be good, maybe even great, promise.

      I have to admit I am disappointed that the great looking chili is recipeless…….but then life is better with a bit of mystery and anyways I am busy salting tongues!!!!!!really.

      mmmm i think sometimes winging it with chili is the best way to go :) i’m willing to get engaged all over again, just to have some chili! yum :)

      i don’t crave chili but always like it when i eat it. having said that i am quite sure that yours was not only delicious but the winner
