
Crunchy, creamy, tangy, spicy. A small celebration in vernal shades of green. Consider this not so much a recipe, but a mere suggestion of what to do when your avocado is dead ripe, a craving for guacamole strikes, and you are missing some key traditional ingredients. Necessity is truly the mother of invention AND inspiration.
Crunchy Snow Pea Guacamole
Yield: approximately 1 cup
2 ripe avocados
Finely microplaned zest of 1/2 lime
Juice of one juicy lime
1/3 cup finely chopped blanched snow peas
2 tbs. snipped fresh dill
1/2 minced seeded serrano chile
Sea salt to taste
Mash avocados. Stir in remaining ingredients until combined. serve with chips and fresh vegetables. I employed chips baked from Ezekiel sprouted grain tortillas and slices of kohlrabi and cucumber as scoops.
Note: This would be wonderful as a dip for shrimp or crab, as a topping for wild salmon or other fish; served alongside grilled or roasted lamb.
